Top 10 Portuguese Recipes on Cookidoo for Thermomix

1. Bacalhau à Brás – A beloved Portuguese cod dish combining shredded salted cod, potatoes, onions, and eggs.

We are known by cooking cod fish in 1001 ways, if we didn't add a cod fish recipe this wouldn't be a post about Portuguese cuisine, however we will have another series just focused on cod fish so stay tuned.

2. Caldo Verde – This Portuguese kale soup is a warm, hearty choice for colder days. With potatoes, chorizo, and kale, it's a healthy, flavorful dish.

Confession Time: I AM... a Caldo Verde Snob 😱😱😱, yes, I know 😰😰 I shouldn't! But I am, So snob as I am for this recipe the Kale needs to be cut really thin and I demand at least 2 slices of Portuguese Chorizo per plate. So I often just go to a portuguese shop, around London we have plenty and I buy myself a pack of frozen caldo verde kale, it makes the job easier really. Ah, I almost forgot if you want to elevate your Caldo Verde experience, make a batch of chorizo bread while your soup is cooking, for sure a Match Made in Heaven. We also combine it with Sardines grilled on the BBQ, specially at St John's Day.

3. Pão de Ló – Make a fluffy and light sponge cake that’s perfect for celebrations. Thermomix helps get the perfect texture for this Portuguese classic.

Pro tip: The Pão-de-ló de Alfeizerão is really the one you must try as it combines the fluffy sponge cake, with an egg sweet mystery. In my home town (renowned by theiPão-de-ló, Ovar!) we bake it at high temperatures in ceramic cake molds for a very short time, and this recipe really helps you achieve very similar results with a traditional oven what makes me really happy as it tastes like home.

4. Arroz de Marisco – Seafood lovers, this dish is for you. This traditional seafood rice is full of aromatic flavors, ideal for a hearty meal.

Frequent Question: Is Arroz de Marisco the same as the Spanish Paella? Spain and Portugal are literally neighbors, so we have similarities in our cuisine, but they are not the same, Portuguese arroz de marisco, seafood rice, is more like a wet rice as it comes in a rich and very welcomed sauce.

5. Pastéis de Nata – Portugal’s famous custard tarts with creamy centers and a flaky crust. Thermomix makes creating these custard tarts simpler than ever.

Mandatory to eat while still warm sprinkled with cinnamon, and for the coffee lovers, match a pastel the nata with a nice cup of coffee and let me know!

6. Pão com Chouriço – A savory bread filled with flavorful Portuguese chouriço, perfect for a quick snack or addition to any meal.

My showcase recipe, cooked in almost all my demos, chorizo bread is so easy to make, individual envelopes full of flavor, they will fill your house with an aroma which takes you to a magical land of dreams and good memories. A Portuguese Classic!

7. Pudins – Traditional Portuguese puddings that are smooth, creamy, and full of flavor. Thermomix makes it easy to achieve the perfect texture for these desserts.

Usually swimming in caramel sauce, made in Thermomix from the beginning till the end, from the caramel sauce till cooking the pudim in the Varoma, this puddings, usually cooked in bain-Marie, something I never managed to master, can be easily cooked in the varoma in a compatible cake tin what makes our life soooooo much easier. In the picture you have the example of 2 very different puddings, with 2 different shapes, an orange flavored one, Pudim de Laranja, and a more traditional pudding, Pudim Abade de Priscos, equally delicious.

8. Açorda Alentejana – A rustic garlic and bread soup with cilantro and poached eggs, packed with bold flavors and perfect for a cozy night in.

Açorda for me is comfort food, as it was a dish my mum made regularly to use old bread, is also a low cost dish, and also food for the heart, so we will dive deep into Açorda soon enough.

9. Pão de Água – Enjoy freshly baked, airy Portuguese water bread. It’s simple yet satisfying, and the Thermomix ensures a perfect bake every time.

The well-known and loved Portuguese Water Bread, probably one of the most famous breads in the Thermomix world, without a Thermomix is a nightmare to make, but Thermomix really comes handy with this one!

10. Arroz Doce – Portuguese rice pudding with cinnamon and lemon. Thermomix ensures a perfectly creamy, flavorful dessert every time.

Pro Tip: if you are more like me, and you prefer pasta over rice, I have another desert called Aletria, very similar, but instead of a rice pudding is a pasta pudding 😂 and it's divine, my mother never made Aletria with eggs, so I skip the egg step on Cookidoo, but you can be the judge and let me know if it's better with eggs or not!

Why Cook Portuguese Recipes with Thermomix?

When you prepare Portuguese dishes with Thermomix, you’re able to simplify the process without sacrificing flavor. The Thermomix is ideal for creating the perfect texture in dishes like Pastéis de Nata, chopping ingredients precisely for Caldo Verde, or stirring consistently to create creamy rice pudding. It’s the ultimate tool for anyone who loves to explore world cuisines with ease.

Tips for Cooking Portuguese Recipes in the Thermomix:

Adjust Ingredients: Use high-quality Portuguese ingredients like chorizo, olive oil, and fresh herbs for an authentic taste. (e.g.: Spanish chorizo has a completely different flavor from the Portuguese, so be mindful if might give completely different tone to your dish).

Experiment with Spices: Many Portuguese dishes rely on simple yet bold flavors like garlic, bay leaves, and fresh cilantro. Don’t be afraid to adjust for your personal preference.

Perfect Your Timing: Thermomix recipes often come with detailed timing instructions, which is essential for dishes like Bacalhau à Brás or Arroz de Marisco, where every second counts for flavor and texture.
